Opening the vents allows more air to circulate in the coals, and since fire needs air, the temp gets hotter.. You can lower the temp by cutting back on some of the air supply, by closing the vents, but I don't recommend closing them all the way.. else you're susceptible to coating your meat with creosote, a nasty, bitter resin given off by fire that normally escapes through the vents.. hope this helps..
