Visit ethermusicfest on the web. They have a link to Hispano TV which video recorded the theremin orchestra back in April at Ethermusic 2008 in Asheviell North Carolina.
Also, visit Kevinkissinger on the web. I believe he has a recording he did by multitracking multiple theremin lines he played on a piece called Ave Verum Corpus. I think he did at least 4 or 5 parts, all on theremin.

Modern theremins usually have between 5,and 6 plus octaves, but most theremin compositions are written to suit a 4 or 5 max octave range, just to be safe.

What exactly is the range of the theremin? I've heard it's roughly analogous to that of the cello, is this correct?

A great question!
We don't strike theremins like drums, or pianos, so they're not percussion.
They have no strings, or reeds, so they're none of those, but they do sometimes have brass antennas, but they're not brass instruments either.
They use no wind, so they're not woodwind.
They are electronic, and are considered synthesizers, so they'd be considered electronic.
They use a non-tactile interface, and are therefore justurally controlled.
